一碗面,十年功。滨江的老面馆透着城市的温情。大排的酥香、虾仁的Q弹、片儿川的鲜美,背后是日夜的忙碌、几代人的接力。循着街头巷尾的飘香,去尝尝滨江的面。

A simple noodle lasts a decade, and the old noodle shops in Binjiang tell the gentle warmth of the city. The crispy pork chops, chewy shrimps and delicious Pian’erchuan noodles embody the hustle and bustle of day and night and the passing down of efforts across generations. 清晨五点,西兴农贸市场刚醒,桥头面馆的董师傅已开始熬汤。

When Xixing Farmers’ Market wakes up at 5 a.m. Chef Dong at Qiaotou Noodle Restaurant is already making the broth.

这家店的前身,是许多老街坊记忆里的“老胡子面馆”。当年老店歇业,爱美食的董师傅夫妇舍不得这味道,更舍不得那些无处寻味的街坊。经过多方筹备,夫妻俩在面馆旧址不远处开了桥头面馆,还请来了老胡子面馆师傅的关门弟子坐镇。

This restaurant used to be “Lao Huzi Noodle Restaurant” in the cherished memories of many local residents. With the closure of the old shop, Chef Dong and his wife, who both loved good food, found they couldn’t let go this cherished flavor, let alone the neighbors with whom they shared many memories and tastes. After extensive preparations, the couple opened Qiaotou Noodle Restaurant not far away from the old shop and even invited the “last disciple” of the master chef from Lao Huzi Noodle Restaurant to guarantee the operation and taste.

如今,桥头面馆也已走过了九个年头,成了许多人心里的“老底子”。

Till now, Qiaotou Noodle Restaurant has also gone through 9 years and become the “trusted classic” in the hearts of many people.

招牌双排面,卤大排厚实酱浓,炸小排外酥里嫩。肉丝炒面,锅气十足,豆干、韭黄在猛火里与面共舞,焦香扑鼻。而面的筋道,是有秘诀的,用的是传统圆碱水面,独创“两次”煮法:面条先煮至七八分熟,客人点单再入滚水烫十几秒。

The signature Double-Chop Noodles feature a thick-cut and sauce-infused braised pork chop and deep-fried pork ribs which are crispy outside and tender within. Stir-fried Noodles with Shredded Pork are prepared by stir-frying dried tofu, yellow chives and noodles together over a high flame, resulting in a dish with a tantalizing fragrance. The secret to the chewy texture of the noodles lies in the use of traditional round alkaline noodles and an ingenious “two-stage” boiling method: the noodles are first boiled to about 70-80% cooked, and then briefly blanched in boiling water for about ten seconds upon each order.

中午的小店,坐满了街坊、白领和远道而来的食客。有人从小学吃到现在,又带来了自己的孩子。墙上有奖状,但更动人的口碑,藏在那些日复一日的熟悉面孔里。

During noon time, the little restaurant is packed with local residents, white-collar workers and food enthusiasts who have travelled from afar. Some have been frequent customers since their primary school, and now bring their own children along. There are awards displayed on the wall, but the more touching reputation lies in the familiar faces that return day after day.

早上五点半,湖漫面馆的灯亮了。张凤华系着红围裙,开始剥虾。旁边的灶台上,整鸡与猪骨已在锅中咕嘟作响。

The lights at Hu Man Noodle Restaurant flicker on at 5:30 in the morning when Zhang Fenghua starts peeling shrimps with a red-apron on. On the stove nearby, a whole chicken and pork bones are already simmering away in the pot.

“就是喜欢做吃的,爱琢磨面。”2015年,为了孩子,也为了这份喜欢,她开了这家店。

“I just love cooking and love working on noodles.” She opened the restaurant in 2015 not only for her children but also for this very passion. 

店小,浇头却有三十多种。招牌虾仁拌川,活虾现买现剥,用生粉轻裹增弹,爆炒时火候极为关键,多一分老、少一分生,唯有恰到好处,才能成就那一口Q弹鲜美。腰花、猪肝、炸仔排,也各有讲究。

Little shop as it is, the restaurant offers more than 30 toppings. Its signature Stir-Fried Noodles with Shrimps use live shrimps bought fresh and peeled to order. The shrimps are coated with potato starch to enhance springiness and stir-fried with crucial heat control: a moment too long and it’s overcooked; a moment too short and it’s undercooked. Only the perfect timing brings the ultimate chewy and delightful bite. Pork kidney, liver and fried pork ribs are also prepared with their own special techniques.

更讲究的是人心。十年,她记住了上百位熟客的口味:谁不要韭黄,谁讨厌蒜泥,谁爱加勺油渣。“老样子?”常客进门,她常笑着先问。偶尔哪位老街坊几天没来,她会惦记,过两天人真就来了。“像有感应。”她笑着说。

What matters more is the care she puts in it, that she has memorized the preferences of over a hundred customers over ten years: who doesn’t want yellow chives, who hates garlic paste, and who loves an extra spoon of crispy lard. “As usual?” she often asks with a smile when a regular customer comes. And she will wonder when a neighbor hasn’t shown up for days. Then usually they will appear soon. “It’s like we have a connection.” She laughs.

忙时一天卖上百碗,累,但一句“老板娘走啦”,一个带朋友来吃的身影,一句朋友圈的夸赞,就让她觉得值。“只要干得动,就想一直做。看大家吃得开心,我就高兴。”

When she is exhausted selling hundreds of bowls on busy days, a simple “goodbye, boss lady”, a regular customer who brings friends, or a praise on Wechat Moments can make her feel worthwhile. “I will continue as long as I can, because it makes me so happy when my customers enjoy my noodles.”

藏在新生农贸市场边的阿林面馆,不好找,却总是满的。早上七点,林师傅在灶前专注翻炒,妻子默契地招呼、端面,几个帮手处理着食材——削笋、择菜、切肉,像一曲排练了十二年的厨房协奏。

Hidden beside Xinsheng Farmers’ Market, Alin Noodle Restaurant is not so easy to find yet always full of customers. At 7 a.m., Chef Lin focuses on stir-frying at the stove and his wife greets guests and serves noodles, while several assistants are busy preparing food materials—peeling bamboo shoots, sorting vegetables, and slicing meat, like a symphony that has been rehearsed for twelve years.

最受欢迎的是片儿川。时令笋、鲜肉丝、自腌咸菜爆香,加水出鲜,再下面条。热腾腾一碗,是唤醒清晨的“头口鲜”。

The most welcomed noodle here is Pian’erchuan. Seasonal bamboo shoots, fresh meat slices and home-made pickled vegetables are first stir-fried and then added with water to draw out the rich flavor, followed by the noodles. Such a steaming bowl is the first taste of freshness that wakes up the morning.

十二年了,阿林心里有本“口味账”。“面硬点”“汤清爽”,常客不用开口。一位从小吃到大的年轻人说:“主要是合口味,习惯了。”

Over 12 years, A Lin has kept the preferences of regulars in the mind. There is no need for regulars to mention the requests like “firmer noodles” or “lighter broth”. A young man who has been eating here since childhood says, “It suits my taste, and I’m used to it.”

下午阿林休息,儿子儿媳接过锅勺。店里的灯,从凌晨四点亮到晚上九点,温暖着每一个早出晚归的人。这是一家人实实在在的坚持。

When A Lin rests in afternoons, his son and daughter-in-law take over cooking duties. The lights in the shop are on from 4 a.m. to 9 p.m., warming every soul who leaves early and returns late. That’s the persistence of family.
